Saffron Corms
Crocus sativus
An autumn-flowering plant, Crocus sativus, is propagated through corms (sometimes, incorrectly called bulbs). Being a perennial, it will come back year after year and will create new daughter corms after a few years.
The stigmas of the flower produce the spice. It takes about 170 flowers to produce a gram of saffron (about 510 stigmas).
Origins of Saffron
Unlike other plants in the crocus family, Crocus sativus flowers in autumn, to avoid the hot summers of its original range (generally considered to be either the Mediterranean or Southeast Asia). Saffron’s history and cultivation spans more than 3,000 years.
